Carrot, Ginger + Apple Soup

While soups are traditionally associated with Winter, I think they’re the perfect meal to have when you want to give your digestive system a break every now and then.

Spring + Summer is BBQ season, and while I try to eat a lot of fish, sometimes I find myself eating more red meat than I’d like. After a couple of days of heavy meals I usually start to crave a light dinner or lunch – and if I’ve had my fair share of salads, a bowl of soup is my go-to. If the weather’s warm outside, then I’ll have it cold or at room temperature. 

This  carrot, ginger + apple soup is lovely and sweet and totally fits the bill. It’s filling on it’s own, however I like to add some flaxseed to mine to boost the protein and fibre content (making it even better for helping my body detox naturally). Plus the bright and vibrant colour makes you just want to jump in and eat it!

 

 

Why it’s good for you:

  • Carrots contain a high amount of fibre which helps bind to toxins and pull them out the body. They also have the highest amount of beta-carotene (the precursor to Vitamin A) out of all the common vegetables which helps with eye health, immune function, clear skin and promote a healthy, luscious head of hair.
  • Ginger is wonderful for maintaining digestive health and has been used for thousands of years as a digestive aid (moving food along the digestive tract) and a remedy for nausea. According to eastern medicine it can help stimulate the digestive system to secrete stomach acid which helps breakdown and absorb the nutrients from the food. Low stomach acid can lead to bloating, increased risk of infection and many other health issues.

Carrot, Ginger + Apple Soup
Serves 2
This delicious and light soup is perfect for a Spring-time lunch! It's full of fibre and beta carotene to support your digestive and detoxification systems, and maintain healthy skin, eyes and hair.

Ingredients
  1. 2 tablespoons olive oil
  2. ½ yellow onion, chopped
  3. 2 inches ginger root, minced
  4. 1 garlic cloves, minced
  5. 3 cups vegetable or bone broth
  6. 1 apple, cubed
  7. 250g carrots, peeled and chopped
  8. Sea salt and freshly ground black pepper
  9. 1 tbsp ground flax seeds (optional)
Instructions
  1. In a large pot over medium heat add olive oil and sauté onion until translucent, about 3 minutes. Add garlic and ginger and sauté another minute until fragrant.
  2. Add vegetable stock or broth, carrots and apple and cook for 20-30 minutes.
  3. Place soup into a high speed blender and blend until smooth or keep as a chunky soup.
  4. Season to taste

  1. I add flax seeds to boost the protein and fibre content which helps to detoxify the body and keep you feeling fuller longer.
