Rosemary + Sea Salt Sweet Potato Chips

Travelling can be tough when you choose to eat a healthy, clean diet.

I recently went on a trip to Melbourne and for the first time ever, I decided that I was going to take my own food on the plane.

I’m not a fan of plane food at the best of times, but when flying with a discount airline the options are really slim. I wasn’t surprised to find that the in-flight menu consisted of biscuits, chips, pies, sausage rolls, breakfast baguettes, packet soups, cakes, sandwiches, hot chocolate, soft drinks… you get the gist. So I was glad I’d come prepared!

So once I’d decided I’d pack my own supplies, the question became… what on earth do I take? 

One of the biggest challenges I find with following a clean, whole food diet is that there are few options that are quick and easy to prepare and suitable to transport. I didn’t do too badly on my rookie attempt, I took along some fruit and yoghurt, nuts, homemade protein balls and some sweet potato chips for the plane. I had planned to eat a meal before we left for the airport, so I would be full and nourished before the flight, but because I was rushing around doing last minutes things (a bad habit of mine) and it wasn’t really meal time, I completely forgot. That meant that in the end, even with my good intentions, halfway through the flight I was so hungry I had to buy a sandwich off the menu! While it wasn’t the end of the world, it was frustrating as the whole point of preparing my own food was to avoid that situation in the first place!

So I wouldn’t say my first try was a complete success, but at least I’m heading in the right direction. For a long time I would consider the plane ride a part of the holiday and eagerly await throwing the ‘diet’ out the window with whatever was on the in-flight menu. Now just looking at the pictures of the packaged food made me feel ill! It’s a continual working progress and I’m constantly learning and striving to be better. As we all are.

Despite being left hungry, one of the triumphs of the day was my sweet potato chips with rosemary and sea salt. Here is the recipe for you to enjoy when you’re after a healthy, tasty and filling snack… that travels well too!

Rosemary + Sea Salt Sweet Potato Chips

Ingredients
  1. 1 large sweet potato
  2. 2 sprigs fresh rosemary (finely chopped)
  3. 2 tbsp of olive oil or coconut oil (melted)
  4. Generous pinch of Himalayan Sea Salt
Instructions
  1. Pre-heat oven to 180 degrees.
  2. Peel and slice the sweet potato into discs as thinly and evenly as possible and place into a large bowl.
  3. Drizzle with oil and add rosemary and a generous pinch of salt.
  4. Using your hands toss the chips in the oil and seasoning to make sure they are evenly coated.
  5. Spread the chips out on lined oven trays in single layers and bake for 15-20 mins, turning halfway through.
Notes
  1. You'll find that the small or thinner chips will crisp up sooner than others, so at the 15 minute mark watch these like a hawk and start removing chips as they are ready.
